I have recently been introduced to Trader Joe’s, I know I am way behind, but the closest Trader Joe’s is about a hour away from me. Needless to say, I am obsessed with certain products. One of those products are these chicken sausages. SOOO GOOD! I have used them with spaghetti squash, as a breakfast sausage, and now in a stir fry. If you do not have chicken sausage, turkey, and/or regular smoked sausage will work as well.

Ingredients
- 1 package chicken/turkey/smoked sausage
- 1 bell pepper (red or green) sliced
- 1 yellow onioin sliced
- 1 zucchinni sliced
- 1 container baby bella mushrooms
- 2 tablespoons olive oil
- salt and pepper to taste
- 2% reduced fat shredded cheese (cheddar or mozz) on top

Instructions
- Slice your sausage and the veggies (zucchini, bell pepper, and onion). Pour olive oil into cooking pan. Add the veggies and meat to pan.
- Cook covered over medium heat until veggies are tender (about 10-15 mins). Add salt and pepper. Top with cheese if you would like and enjoy!!

TJ’s does have some good sausages but Costco has Sabatino’s chicken sausages that are even better! I’ve been slicing them and sauteeing with sliced mini-bell peppers or onions and anaheim/jalapeno peppers, depending on which flavor I’m using. Very easy and very tasty!
