Mexican Stuffed Peppers

Craving some Mexican but thinking you won’t enjoy it with your food limitations that you have to take in consideration? Not anymore! How about some Mexican Stuffed Peppers?!? Instead of the starchy tortilla that is used for tacos and burritos, how about taking the taco/burrito fillings and stuff them into a pepper. This is a perfect meal for bariatric patients. This recipe is great for both family meals and entertaining!

Instructions
  1. Preheat oven to 350 degrees.
  2. Wash and cut bell peppers in half (lengthwise) and place peppers in a baking pan cut side up.
  3. In a saucepan, combine refried beans, black beans, chicken, chopped onions, and bell peppers. Heat until thoroughly mixed and hot. Remove from stove.
  4. Scoop the filling into each pepper. Place stuffed peppers in oven on 350 degrees for 25 minutes.
  5. Remove from oven, add shredded cheese to each stuffed pepper, and return to oven for 5 minutes or until cheese is melted.
  6. Remove from oven. Top with salsa and jalapenos if desired.
