Here is a quick and easy protein packed, low carb lunch. To make this bariatric friendly, the main item we are using are Quest protein chips – these are a great low carb, and high protein alternative to chips that will help you feel more full, along with the other proteins we are using in this meal. For another protein source, I used plant based beef crumbles (made out of tofu, but you can use shredded/ground beef, chicken, or turkey), along with low fat or fat free cheese, and some non starchy vegetables I had on hand in my fridge to help add some color to this meal.

Ingredients
- 1 individual bag Quest protein chips
- 3/4 c Plant based beef crumbles can sub shredded/ground meat
- 1/8 c Fat free mozzarella cheese shredded
- 1 Mini sweet bell pepper sliced
- cilantro garnish
- cooking spray
- 1 Tablespoon garlic powder
- 1 Teaspoon paprika
- salt and pepper as needed

Instructions
- Cook plant based beef crumbles (or other choice of shredded/ground protein) on stove top in non stick skillet OR with cooking spray; add seasoning as desired
- While your protein source is cooking, prepare a small baking sheet by spreading out the Quest chips.
- Top the chips with cooked protein, cheese, non-starchy veggies of choice.
- Place baking sheet into toaster oven until cheese is melted/broiled to desired level.
- Top with cilantro and enjoy.
