A patient forwarded me this recipe last week https://kaseytrenum.com/keto-ground-beef-casserole-perfect-comfort-dish and had asked if it was okay to prepare it for dinner. My answer was OF COURSE it is, with a few modifications. The base to almost every keto recipe is heavy cream, a block of cream cheese, and multiple cups of shredded cheese. Adding in to much fat to your daily intake can result in a slowdown in weight loss or even potentially cause weight gain. You can reduce each one of these ingredients by half and still yield the same tasty results!
This recipe may look slightly peculiar, but I highly recommend giving it a try. Super quick, easy, and it tasted great!
**Side note, I will probably add mushrooms to it next time, because they are one of my favorite vegetables :).

- 1 lb lean ground beef
- 1 small yellow onion, chopped
- 2 tablespoons minced garlic
- 1/4 cup beef broth
- 1/4 cup half and half
- 2 ounces reduced fat cream cheese
- 2 cans green beans (drained)
- salt and pepper for taste
- 2% reduced fat shredded cheese (cheddar or mozz) on top

- Preheat oven to 350 degrees. Dice up yellow onion and mince garlic (if fresh).
- Brown ground beef, onion, and garlic.
- Once meat is browned; add in cream cheese, half and half, and beef broth.
- Cook over medium heat until cream cheese is melted and mixture slightly thickens.
- Add in both cans of green beans and mix together. Add to a baking dish and top with cheese of your choice. Bake at 350 degrees for 30 mins.
