Meatloaf is one of the main food staples in our house. There are many different ways to make meatloaf. This recipe for mini fiesta meatloaf is quick & easy. It will leave your taste buds satisfied and your tummy full!
I like to make mini meatloaf for several reasons:

Ingredients
- 1 large red onion
- 1 large bunch fresh cilantro
- 2 eggs
- 2 lbs lean ground beef
- 1 can red kidney beans drained & rinsed
- 2 packets taco seasoning mix
- cooking spray
- shredded cheese if desired
- salsa if desired

Instructions
- Preheat oven to 400 degrees.
- Peel and quarter red onion. Combine with cilantro in food processor. Process on low-speed until well chopped.
- Combine ground beef, red kidney beans, eggs, chopped onion & cilantro and taco seasoning in a large mixing bowl. Mix and blend well by hand or stand mixer.
- Coat muffin tin with cooking spray and divide meat mixture evenly into each cup.
- Bake at 400 degrees for 20-25 minutes or internal temp of 165 degrees.
- Top with shredded cheese and salsa if desired.
