Summertime Egg Salad

Looking for a quick summertime dish? This protein packed egg salad delivers a delicious creamy flavor. Most of the ingredients you already have laying around. I used smoked paprika and basil but use whatever herbs and seasonings you have available. The egg salad can be served in a leaf wrap or with our WeightWise protein bread. This dish would go well for a picnic or get together! This recipe was made by our intern, Emily.

  1. Boil eggs.
  2. Dice onions while eggs boil.
  3. After eggs have boiled, give them a rough chop and add yogurt.
  4. Mash eggs, yogurt, mustard, and seasonings.
  5. Enjoy! You may also use a large lettuce leaf or the WeightWise protein bread.
