Grilled Vegetable Kabobs

Grilling season is now upon us! My weekend will be full of family, fun, and hopefully some sunshine.  With the sun shining and gobs of family and friends at our house our grill will most likely be put to the test.

One of my favorite vegetable sides to do during this time of year is grilled vegetable kabobs. They are simple and beautiful with all of the colors. Plus, I find that the kids in my family like to help assemble them so it’s less work for me.

The grilled vegetable kabobs were delicious and went so well with the grilled burgers and turkey brats.  A few other great “cookout” type recipes I used this weekend were the Tomato Cucumber Salad and Deviled Pork Chops.

Grilled Vegetable Kabobs

Instructions
  1. Cut all vegetables into 1/2 to 1 inch chunks or slices.
  2. Alternate threading vegetables onto skewer leaving a few inches at bottom of skewer.
  3. Mix olive oil, black pepper, salt, and chopped fresh basil in bowl. Brush over vegetable skewers
  4. Place on hot grill for 10 minutes, turning every few minutes, until vegetables are just tender. Remove from heat and serve hot.
