I like to make mini meatloaf for several reasons:

Preheat oven to 400 degrees.
Peel and quarter red onion. Combine with cilantro in food processor. Process on low-speed until well chopped.
Combine ground beef, red kidney beans, eggs, chopped onion & cilantro and taco seasoning in a large mixing bowl. Mix and blend well by hand or stand mixer.
Coat muffin tin with cooking spray and divide meat mixture evenly into each cup.
Bake at 400 degrees for 20-25 minutes or internal temp of 165 degrees.
Top with shredded cheese and salsa if desired.
