Finding new and flavorful side dishes can be challenging. Especially low carb sides. Radishes can be a great, flavorful side dish that you don’t run across too often. I am a huge fan of roasted vegetables, but I’ve never tried roasted radishes. I figured if roasted carrots, turnips, and brussels sprouts are good, then roasted radishes couldn’t be too bad.

- 1 bunch radishes quartered
- 3 tbso fresh oregano minced
- 2 cloves garlic minced
- 1 tsp lime juice
- 1 tbsp olive oil
- 1/4 tsp salt
- 1 tsp black pepper

Instructions
- Preheat oven to 375 degrees.
- Start by washing and separating the bunch of radishes.
- Remove the stems and roots off each radish, then cut into quarters. Set these aside until the seasoning is ready.
- Minced oregano and garlic.
- In a small bowl, stir together oregano, garlic, lime juice, olive oil, salt, and black pepper.
- Toss the radishes in the seasoning mixture until each radish is well coated.
- Spread the radishes evenly into a glass baking dish. Place in a hot oven to roast for about 30 minutes or until just tender.
- Serve with grilled pork chops or chicken.
