Fish is a great protein option that is often overlooked. Many patient tell me they would love to eat more fish but lack the recipes or experience in cooking it. Tilapia is a light, flaky, white fish that is easy to prepare. It is the perfect fish for a quick and tasty dinner. Adding a healthy dose of fruit and veggies in the form of mango salsa provides an additional flavor and nutrient boost to this tilapia and mango salsa dish.

Instructions
  1. Dice mango, red onion, cucumber, cilantro, and jalapeño. Add diced ingredients together in a bowl, toss, and top with lime juice.

  2. Refrigerate for 20-30 minutes before serving.
  3. Preheat oven to 375 degrees.
  4. Rinse fish with water and pat dry. Season each fillet with salt and pepper. Add the tilapia to a baking sheet, spray each fillet with cooking spray, and cook in the oven for 8 to 12 minutes.

  5. Serve baked tilapia with mango salsa.
