Blackened Tilapia

Waking up to the smell of coffee brewing. The sound of rain falling on a window. Rain in general. Reading a good book or hearing a good story. Cookouts or picnics or just eating outside. So many of my favorite things happened today and I am grateful to have such a wonderful start to my week. What are some of the things you are grateful for today?

 I am also grateful for good food and the ability I have to prepare food. Today’s recipe is for Blackened Tilapia.

When I am not in the mood to cook (yes, it does happen), I usually turn to fish for a few different reasons. One, it doesn’t take long to thaw. Just a few minutes under warm water and you are set. Second, it only takes 5-7 minutes to cook!

This recipe for Blackened Tilapia uses several ingredients, but most are common kitchen spices. So unless you are building up your stock, you won’t need much from the store.

Instructions
  1. Pat tilapia dry with a paper towel.
  2. Mix all spices together in a bowl. Place a heaping tsp of spice mix on each fillet. Rub spices over entire surface then let sit at room temp for 10 minutes.

  3. Heat grapeseed oil in pan over high heat until almost smoking. Add tilapia to pan.
  4. Cook for 3 minutes on each side. The fish should look opaque and flake with a fork when done.

  5. Garnish with fresh parsley and lemon wedge if desired.
