Well today has been interesting and proves to me that Oklahoma never knows what “season” we are in. I have grown to know this over my 30 years on this Earth, but it always makes me shake my head. It was bright and shiny Friday with the highs around 86 degrees. Today it has been cloudy, rainy, and below 60. However, I will not let that get me down because cooler weather means one of two things in terms of dinner, soup or a crockpot meal. I love my slow cooker meals! Throw everything in the crockpot in the morning and leave it alone for the rest of the day. Yes please! Beef tips are one of my childhood favorites and is a cross between stew and beef stroganoff. I find that I prefer stew meat/beef tips in the crockpot because the meat gets tender and juicy after sitting in the flavorful gravy all day. I typically serve this over cauliflower mashed potatoes. However, you could also pair this with cauliflower rice and/or a non-starchy vegetable.

Crock Pot Beef Tips
Instructions
Place the stew meat at the bottom of your slow cooker. Mix together the cream of mushroom, brown gravy, onion soup mix, and water. Add to the stew meat.
Top with onions and mushrooms. Cook on low for 6 hours or on high for 4 hours.
