Mediterranean Chicken

Happy Friday, WeightWise friends. The weekend is so close I can taste it! I get to spend the next two days celebrating my wonderful father on his 60th birthday. We are having a family cookout on the farm. I have some turkey brats and hamburger patties planned and you can bet that I am taking some Turkey Bacon Deviled Eggs and some Bell Pepper Slaw.

With all of the preparation for leaving town tomorrow, I don’t want to spend a ton of time making dinner tonight. So the student intern at WeightWise this week provided a recipe for Mediterranean Chicken. He said that it is super flavorful and easy to make. It will become an instant favorite I’m sure.

Instructions
  1. Cut chicken into 3-inch square pieces and season with salt and pepper.
  2. In a large nonstick skillet, heat the olive oil over high heat. Add the chicken and cook until well browned (about 2 minutes per side).
  3. Add tomatoes, lemon juice, garlic, and capers. Bring the mixture to a simmer, then reduce heat to low. Cover pan and cook for 8 minutes.
  4. Uncover pan and continue cooking, turning the chicken once, until chicken is not longer pink in the middle and sauce has thickened (about 10 minutes).
  5. Serve hot.
