Place cubed chicken thighs in skillet over medium-high heat. Add spices to chicken. Cook chicken, stirring occasionally for about 4 minutes.
Add sliced peppers and onions to chicken. Continue cooking, stirring occasionally, for about 4-5 minutes or until chicken is no longer pink in middle.
Chop tomatoes and avocado.
Layer chicken and veggies on top of lettuce leaf. Top with tomatoes, avocado, cheese, salsa, or plain greek yogurt if desired.
