Stuffing, sadly, is very starch heavy. The traditional recipes are off limits for most of us. Well, stuffing is getting a makeover. Sausage and herb stuffing is a low carb version that will keep you on plan and still give you that traditional feel.

Ingredients
- 1 lb turkey sausage
- 1/4 cup celery chopped
- 1/4 cup red onion chopped
- 2 eggs
- 2 cups cauliflower chopped
- 1/2 cup yellow squash chopped
- 1/2 cup Parmesan cheese grated
- 1 tbsp fresh parsley chopped
- 3 tbsp fresh sage chopped
- 3 tbsp fresh thyme chopped
- 1 tbsp garlic minced
- salt to taste
- black pepper to taste

Instructions
- Preheat oven to 350 degrees.
- Brown sausage in skillet over medium heat. Add celery and onion. Stir occasionally and cook until browned.
- Whisk eggs in a large bowl. Add sausage and all remaining ingredients. Stir until well combined, then pour mixture into baking dish. Cook 30 minutes or until brown on top.
- Remove from oven and serve hot.
